Blue Cheese Rolls

Ingredients

Makes 4 (7-inch) logs

Prep: 15 min., Chill: 1 hr.

  • 2 8-ounce packages cream cheese, softened
  • 1 8-ounce package sharp Cheddar cheese slices, cut up
  • 2 4-ounce packages crumbled blue cheese
  • ½ small onion diced
  • tablespoons Worcestershire sauce
  • ½ teaspoon ground red pepper
  • cups finely chopped toasted pecans divided
  • cups finely chopped fresh parsley divided

Instructions

  • Place first 6 ingredients in a food processor; pulse 1 to 2 minutes, stopping to scrape down sides.
  • Stir together cheese mixture, 1 cup pecans, and ½ cup parsley.
  • Cover and chill 1 hour.
  • Shape cheese mixture into 4 (7-inch-long) logs.
  • Combine remaining ½ cup pecans and 1 cup parsley.
  • Roll logs in parsley mixture; cover and chill.

Serve with crackers.

    Notes & Wine Advice

    For testing purposes only, we used Old English cheese slices. Cheese rolls may be prepared ahead and frozen, if desired. Thaw in refrigerator overnight.
