The ingredients require very little preparation, and everything comes together in approximately 35 minutes. Preparing the white wine sauce with reserved stock adds creaminess without overwhelming the vegetables.

Preparing the Vegetable Stock

Keep the vegetable stock warm while cooking the rice. Adding cold stock lowers the temperature of the skillet and interrupts the gradual release of starch that gives risotto its creamy consistency. Reserve 200 ml before beginning so enough liquid remains available for the white wine sauce.
