Chicken and Goat Cheese Balls
Ground chicken can be a bit dry, but with the addition of the onion and goat cheese, these lean, mean chicken and goat cheese balls are just what the doctor ordered!

Ingredients
- 450 grams chicken mince
- 1 ½ tablespoons peeled and grated brown onion
- ¼ cup chopped fresh basil leaves
- ⅓ cup goat cheese crumbled
- ½ cup ground pork rinds
- ½ teaspoon garlic powder
Instructions
- Preheat air fryer at 180°C for 3 minutes.
- In a large bowl, combine all ingredients and form into 18 meatballs, about 2 tablespoons each.
- Add 9 balls to air fryer basket lightly greased with olive oil.
- Cook for 6 minutes.
- Shake basket and cook for an additional 6 minutes.
- Transfer cooked balls to a serving plate and repeat cooking with remaining 9 balls.
- Serve warm.
