Removing moisture from the zucchini is essential for a crisp result. Squeeze it firmly after the 45-minute draining time. Keep the skillet over medium heat so the centers cook before the outsides become too dark. Add fresh butter between batches when needed.Variations

About Crispy Zucchini Fritters
Crispy zucchini fritters turn grated zucchini into golden skillet-fried bites with a tender, cheesy center. Eggs and flour bind the vegetables, while Parmesan adds savory flavor and helps the surface brown. They can be served as a side dish, light lunch, snack, or part of a relaxed brunch.
Zucchini contains a large amount of water, so the draining stage is central to the recipe. Salting the grated vegetable draws moisture from its cells. Squeezing it thoroughly afterward produces a mixture that holds together and fries instead of steaming.
This Greek-inspired preparation fits naturally among our Greek recipes. Its simple ingredients make it useful during summer, when fresh zucchini is widely available and garden harvests can be especially generous.
Why Savory Zucchini Pancakes Stay Crisp
Savory zucchini pancakes need a mixture that contains enough binding ingredients without becoming heavy. Eggs hold the grated vegetables together, flour absorbs remaining moisture, and Parmesan contributes both structure and flavor.
The skillet should be properly heated before adding the first portions. If the butter is not hot enough, the fritters absorb more fat and remain pale. Excessively high heat creates the opposite problem by browning the exterior before the center has cooked.
Do not overcrowd the skillet. Leaving space around every fritter makes turning easier and allows steam to escape. Cook in several batches and add fresh butter as needed. Discover other vegetable-based ideas in our Vegetarian recipe collection.
Preparing the Zucchini Mixture
Successful crispy zucchini fritters begin with evenly grated zucchini. A box grater creates thin pieces that soften quickly and combine easily with the egg mixture. There is no need to peel young zucchini because its skin adds color and texture.
Mix the grated zucchini with salt and leave it for 45 minutes. Transfer it to a colander, press firmly, and then squeeze small handfuls until very little liquid remains. A clean kitchen towel can also be used for this step.
Whisk the eggs before adding the flour, Parmesan, black pepper, and drained zucchini. Stir only until everything is evenly combined. Divide the mixture before frying so the portions remain similar in size and cook at approximately the same rate.
Serving Savory Zucchini Pancakes
Savory zucchini pancakes taste best directly from the skillet, when their surfaces are crisp and their centers remain warm. Serve three fritters per person with tzatziki, herb yogurt, sour cream, or fresh lemon.
For lunch, combine them with tomato salad, grilled vegetables, or crusty bread. They also work as a side dish for chicken, salmon, white fish, or grilled meat. Browse our Lunch recipes for additional meal combinations.
Smaller fritters make convenient finger food for a picnic or shared appetizer platter. Fresh dill, parsley, or spring onions can be scattered over the top immediately before serving.
Storage and Reheating
Store leftover savory zucchini pancakes in an airtight container in the refrigerator for up to three days. Place parchment paper between layers to prevent them from sticking together and becoming excessively soft.
Reheat the fritters in a dry skillet over medium heat for 2–3 minutes per side. They can also be reheated in an air fryer at 180°C (356°F) for approximately 4 minutes. Microwave reheating is possible but will not restore the crisp exterior.
The uncooked mixture should be used promptly because zucchini continues releasing moisture after it is combined with salt. Follow current FDA food-safety guidance when storing recipes containing eggs and cheese. With golden edges and a tender Parmesan center, crispy zucchini fritters are a dependable way to use fresh summer zucchini.
