Ingredients

  • 1 butternut pumpkin skin on and cut into 2 cm chunks
  • Olive oil spray
  • Sea salt flakes to taste
  • Black pepper freshly ground, to taste
  • 1 red capsicum roughly chopped
  • 1 red onion cut into 8 wedges
  • 4 garlic cloves lightly crushed
  • 8 sausages
  • 3 tablespoons harissa to taste
  • 1 lemon juiced
  • 100 g leafy greens such as kale or cavolo nero, roughly sliced
  • Natural yogurt to serve, optional

Instructions

  • Preheat the air fryer to 200ยฐC.
  • Spray the butternut pumpkin with olive oil and season with sea salt and black pepper. Transfer to the air fryer basket and cook for 10 minutes.
  • Toss the red capsicum, red onion and garlic in the basket and shake to combine.
  • Combine the sausages, harissa and lemon juice, then add them to the air fryer basket.
  • Cook for a further 20 minutes, until the sausages are cooked through and the vegetables are tender.
  • Stir through the leafy greens and cook for a further 5 minutes.
  • Serve hot with natural yogurt, if desired.
