A spicy air fryer traybake with sausages, butternut pumpkin, red capsicum and leafy greens coated in harissa and lemon. A hearty, colourful dinner with very little preparation.
1butternut pumpkinskin on and cut into 2 cm chunks
Olive oil spray
Sea salt flakesto taste
Black pepperfreshly ground, to taste
1red capsicumroughly chopped
1red onioncut into 8 wedges
4garlic cloveslightly crushed
8sausages
3tablespoons harissato taste
1lemonjuiced
100gleafy greenssuch as kale or cavolo nero, roughly sliced
Natural yogurtto serve, optional
Instructions
Preheat the air fryer to 200°C.
Spray the butternut pumpkin with olive oil and season with sea salt and black pepper. Transfer to the air fryer basket and cook for 10 minutes.
Toss the red capsicum, red onion and garlic in the basket and shake to combine.
Combine the sausages, harissa and lemon juice, then add them to the air fryer basket.
Cook for a further 20 minutes, until the sausages are cooked through and the vegetables are tender.
Stir through the leafy greens and cook for a further 5 minutes.
Serve hot with natural yogurt, if desired.

Serving Advice
Serve the Harissa Sausage Traybake hot with a spoonful of natural yogurt to balance the spicy harissa. It makes a complete Main Course, but you can also add warm Bread or a simple salad for a larger meal.
Storage Advice
