Equipment

  • Crockpot

Ingredients

  • 1 whole chicken
  • 1 onion –chopped
  • 3 celery ribs – cut
  • 4 carrots – cut
  • ½ orange or 1 lemon – sliced
  • Fresh thyme Or 1 tbsp dried thyme
  • 4 garlic cloves – minced
  • 1 tbsp kosher salt
  • 2 tbsp olive oil
  • 1 tsp black pepper

Instructions

Combine in crock pot:

  • Onion
  • Celery
  • Carrots
  • Combine in bowl:
  • Garlic cloves
  • Olive oil
  • Salt & pepper
  • Thyme

Spread mixture under the skin of chicken

  • Stuff orange or lemon slices and fresh thyme under skin as well
  • Roast on high for 3-4 hours
  • Remove chicken and serve
  • Add 2 cups of water to crock pot
  • Cook on low for 8-10 hours
  • Add bones after eating or storing chicken
  • Strain liquid from crock pot and refrigerate
  • Dump solids into trash
  • After stock has cooled, remove hard fat from top and discard
  • Freeze the stock or use it within a few days
