whole chicken

onion –chopped
▢

celery ribs – cut

carrots – cut
▢

orange
or 1 lemon – sliced

Fresh thyme
Or 1 tbsp dried thyme
▢

garlic cloves – minced
▢

kosher salt

olive oil

black pepper
Instructions
Combine in crock pot:
Onion
Celery
Carrots
Combine in bowl:
Garlic cloves
Olive oil
Salt & pepper
Thyme
Spread mixture under the skin of chicken
Stuff orange or lemon slices and fresh thyme under skin as well
Roast on high for 3-4 hours
Remove chicken and serve
Add 2 cups of water to crock pot
Cook on low for 8-10 hours
Add bones after eating or storing chicken
Strain liquid from crock pot and refrigerate
Dump solids into trash
After stock has cooled, remove hard fat from top and discard
Freeze the stock or use it within a few days
