Savory Italian-inspired frittata with tender chicken and creamy Mascarpone cheese.

Ingredients
- 1 1-pound fillet chicken breast
- Sea salt and ground black pepper to taste
- 1 tablespoon olive oil
- 4 eggs
- 1/2 teaspoon cayenne pepper
- 1/2 cup Mascarpone cream
- 1/4 cup freshly grated Asiago cheese
Instructions
- Flatten the chicken breast with a meat mallet and season with salt and pepper.
- Heat the olive oil in a frying pan over medium heat.
- Cook the chicken for 10 to 12 minutes until done.
- Slice into small strips and set aside.
- In a mixing bowl, whisk together the eggs, cayenne pepper, and additional salt to taste.
- Stir in the Mascarpone and Asiago cheese.
- Add the cooked chicken strips to the egg mixture, stirring to combine.
- Pour the mixture into a lightly greased pan and place it in the Air Fryer basket.
- Preheat the Air Fryer to 355°F and cook for 10 minutes, flipping halfway through.
