Italian Chicken and Cheese Frittata

Instructions
Flatten the chicken breast with a meat mallet and season with salt and pepper.
Heat the olive oil in a frying pan over medium heat.
Cook the chicken for 10 to 12 minutes until done.
Slice into small strips and set aside.
In a mixing bowl, whisk together the eggs, cayenne pepper, and additional salt to taste.
Stir in the Mascarpone and Asiago cheese.
Add the cooked chicken strips to the egg mixture, stirring to combine.
Pour the mixture into a lightly greased pan and place it in the Air Fryer basket.
Preheat the Air Fryer to 355°F and cook for 10 minutes, flipping halfway through.
Serve warm and enjoy this Italian-inspired frittata!
