Ingredients

  • 1 lb lamb shoulder cut into cubes
  • 2 cups canned tomatoes diced or crushed
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350°F (175°C).
  • Heat olive oil in a large pan over medium heat.
  • Add the lamb cubes and brown on all sides, about 5-7 minutes.
  • Transfer the browned lamb to a casserole dish.
  • In the same pan, add the diced onions and garlic.
  • Sauté until softened, about 5 minutes.
  • Add the canned tomatoes, vegetable broth, cumin, rosemary, and thyme to the pan.
  • Stir to combine and bring to a simmer.
  • Pour the tomato mixture over the lamb in the casserole dish.
  • Cover with foil and bake in the preheated oven for 1.
  • 5 to 2 hours, until the lamb is tender and the flavors have melded together.
  • Remove from the oven and let it rest for 10 minutes before serving.
