Ingredients

  • 150 g ¾ cup nondairy white chocolate chips
  • 84 g ¼ cup agave nectar
  • 93 g ¾ cup macadamia nuts
  • 397 g 14 ounces silken tofu, drained, patted dry, and cut into cubes
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon grated lemon zest

Instructions

  • In a microwave-safe bowl, combine the white chocolate chips and agave nectar.
  • Melt in the microwave, stirring occasionally to prevent scorching.
  • In a food processor, grind the macadamia nuts until they resemble a butter-like consistency and start to release their oil.
  • This may take a few minutes.
  • Add the melted chocolate, silken tofu, vanilla extract, and lemon zest to the food processor.
  • Process until the mixture is perfectly smooth, scraping the sides occasionally.
  • Divide the pudding among 4 small dessert dishes.
  • Chill the pudding overnight to allow the flavors to develop.
