Ingredients

  • 340 g 12 ounces firm or extra-firm regular tofu, drained, patted dry, and cut into cubes
  • 120 g ½ cup nondairy sour cream (store-bought or homemade)
  • 256 g 1 cup creamy no-stir sweetened peanut butter
  • teaspoons pure vanilla extract
  • 120 ml ½ cup pure maple syrup or 168 g agave nectar
  • ¼ teaspoon fine sea salt

Instructions

  • In a food processor, combine the tofu, nondairy sour cream, and peanut butter.
  • Blend until smooth, scraping the sides occasionally.
  • Add the vanilla extract, maple syrup (or agave nectar), and fine sea salt.
  • Blend again until perfectly smooth, scraping down the sides as needed.
  • Divide the mousse evenly among 8 small dessert dishes.
  • Chill in the refrigerator for several hours or overnight before serving.
