Ingredients

  • 1 large head of romaine lettuce chopped
  • 2 tomatoes chopped
  • 1 cucumber chopped
  • 1/2 green pepper chopped
  • 5 scallions chopped
  • 1 cup crumbled tofu or veggie cheese feta-style
  • 12-16 black olives pitted
  • Balsamic Salad Dressing store-bought or homemade

Instructions

  • In a large mixing bowl, combine the chopped romaine lettuce, tomatoes, cucumber, green pepper, scallions, crumbled tofu or veggie cheese, and black olives.
  • Toss all the ingredients together until well mixed.
  • Transfer the salad to a serving bowl.
  • Serve the Mediterranean Romaine Salad with Balsamic Salad Dressing on the side.
  • Enjoy this refreshing and flavorful Greek-inspired salad as a light and healthy appetizer or side dish!
