Ingredients

  • 2 cups rolled oats
  • 1/8 cup sunflower seeds
  • 1/4 cup pepitas pumpkin seed kernels
  • 4 ounces dried apricots
  • 2 tablespoons black chia seeds
  • 1/8 cup shredded unsweetened coconut
  • 6 tablespoons butter chopped
  • 1/8 cup firmly packed brown sugar
  • 2 tablespoons honey
  • 1/2 teaspoon ground cinnamon

Instructions

  • Process 1 cup of oats until it reaches the consistency of shredded coconut.
  • Add sunflower seeds and pepitas and pulse briefly until a few are coarsely chopped.
  • Transfer this mixture to a large bowl.
  • Process apricots, chia seeds, and 2 tablespoons of boiling water until they are finely chopped; add this mixture to the bowl with the coconut.
  • Stir the butter, sugar, honey, and cinnamon in a medium saucepan over low heat until the sugar dissolves, and the mixture is smooth.
  • Stir this into the oat mixture until well combined, then stir in the remaining oats.
  • Pull out the pan and basket from a 5- or 6-quart air fryer.
  • Remove the basket from the pan and place it on a sheet of parchment paper.
  • Trace around the base of the basket and cut out a shape that is 3/4 inch larger than the marked tracing.
  • Grease the basket and line it with the paper cutout.
  • Press the oat mixture very firmly over the paper, using the base of a glass or an offset spatula to compact the mixture.
  • Insert the basket back into the pan and slide it back into the appliance.
  • Set the temperature to 285°F and the timer for 40 minutes.
  • Allow it to cook.
  • Remove the basket from the pan and place it on a wire rack to cool completely.
  • Using the paper as an aid, lift the slice from the basket and cut it into 12 bars.
