Mustard Sausage & Apple Potato Hash
Ingredients
- 2 small apples cored and cut into wedges
- 30 g butter melted
- 2 tablespoons olive oil
- 4 pork sausages cut into chunks
- Sea salt flakes to taste
- Black pepper to taste
- 3 thyme sprigs leaves picked
- 450 g white potatoes peeled and cut into coins
- 2 teaspoons wholegrain mustard
- Mixed salad to serve
Instructions
- Bring a large saucepan of salted water to the boil. Add the potatoes and cook for 4 minutes. Drain and leave to steam-dry in a colander.
- Preheat the air fryer to 180ยฐC.
- Brush the potato wedges with half the melted butter and olive oil.
- Arrange the potatoes in the air fryer basket and cook for 10 minutes, turning once, until golden and starting to caramelise.
- Remove the potatoes and add the sausages.
- Increase the air fryer temperature to 190ยฐC and cook the sausages for 5 minutes.
- Add the apple wedges and cook for another 5 minutes.
- Season with salt and black pepper.
- Drizzle over the remaining butter and olive oil, add the wholegrain mustard and thyme leaves, and toss everything together.
- Serve immediately with mixed salad.
