A hearty sausage and potato hash with sweet apple wedges, wholegrain mustard, thyme, and golden roasted potatoes. Everything cooks together in the air fryer for a simple savoury meal with a fresh salad on the side.
Bring a large saucepan of salted water to the boil. Add the potatoes and cook for 4 minutes. Drain and leave to steam-dry in a colander.
Preheat the air fryer to 180°C.
Brush the potato wedges with half the melted butter and olive oil.
Arrange the potatoes in the air fryer basket and cook for 10 minutes, turning once, until golden and starting to caramelise.
Remove the potatoes and add the sausages.
Increase the air fryer temperature to 190°C and cook the sausages for 5 minutes.
Add the apple wedges and cook for another 5 minutes.
Season with salt and black pepper.
Drizzle over the remaining butter and olive oil, add the wholegrain mustard and thyme leaves, and toss everything together.
Serve immediately with mixed salad.

Serving Suggestions
Serve the sausage, apple and potato hash immediately while the potatoes are crisp and the apples are still tender. A simple mixed salad provides a fresh contrast to the rich sausages and buttery mustard coating.
Recipe Notes
Parboiling the potatoes before air frying gives them a tender centre while helping the outside become golden and crisp. Allow them to steam-dry thoroughly after draining, as excess moisture can prevent proper browning.Choose firm apples that hold their shape during cooking. Their natural sweetness works particularly well with the savoury pork sausages and wholegrain mustard.
Variations
Try the recipe with different varieties of pork sausage or add a little extra wholegrain mustard for a stronger flavour. Red onion wedges can also be added with the apples. For additional herbs, rosemary or sage works well with both pork and apple.
Storage and Reheating
Store leftovers in a covered container in the refrigerator for up to 2 days. Reheat thoroughly in the air fryer until piping hot. The air fryer is preferable to a microwave because it helps the potatoes regain some of their crisp texture.
Wine Advice
A fresh Riesling works well with the combination of apple, mustard and pork. A lightly oaked Chardonnay is another good option, particularly with the buttery potatoes and sausages.
