Orange Citrus Shortbread Cookies

Ingredients
- ½ teaspoon baking powder gluten-free
- 100 g butter unsalted and softened, plus extra for greasing
- 50 g caster sugar
- 175 g plain flour gluten-free
- 1 orange rind finely grated
Instructions
- Beat the softened butter in a mixing bowl until smooth. Add the caster sugar and grated orange rind and cream together until light and fluffy.
- Add the plain flour and baking powder and mix until a soft dough forms.
- Roll the dough into a circle approximately 5 mm thick and decorate the edge with the back of a fork.
- Cut the dough into 10 equal wedges and transfer them to a greased baking sheet. Chill for 15 minutes.
- Preheat the oven to 190°C (375°F), Gas Mark 5.
- Bake for 12–15 minutes, until lightly golden.
- Leave the cookies on the baking sheet for 2 minutes, then transfer them to a wire rack and cool completely.
- Store in an airtight container at room temperature for 3–4 days.
