Equipment

Ingredients

For Parsnips

  • 1 teaspoon olive oil
  • ½ teaspoon salt
  • 3 large parsnips peeled, halved lengthwise and cut into 3cm half-moons

For Tahini Dressing

  • 1 tablespoon tahini
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon water
  • 1 clove garlic peeled and minced
  • 1 tablespoon chopped fresh parsley

Instructions

To make Parsnips:

  • Preheat air fryer at 190°C for 3 minutes.
  • In a medium bowl, whisk together olive oil and salt.
  • Add parsnips and toss.
  • Add parsnips to ungreased air fryer basket and cook for 5 minutes.
  • Toss, then cook for an additional 5 minutes.

To make Tahini Dressing:

  • While parsnips are cooking, whisk together tahini, lemon juice, water and garlic in a medium bowl.
  • Add cooked parsnips and toss.
  • Transfer to a medium serving dish.
  • Garnish with parsley.
  • Serve.
