Preheat the air fryer to 190°C (374°F) for 3 minutes.
Whisk the olive oil and salt together in a medium mixing bowl.
Add the parsnips and toss until evenly coated.
Transfer the parsnips to the ungreased air fryer basket and cook for 5 minutes.
Toss the parsnips and cook for another 5 minutes, until tender and lightly golden.
Meanwhile, whisk the tahini, lemon juice, water, and garlic together in a medium bowl until smooth.
Add the cooked parsnips to the tahini dressing and toss until evenly coated.
Transfer to a serving dish.
