  • 2 teaspoons olive oil
  • 1 onion thinly sliced
  • 1 red pepper thinly sliced
  • 3 to 4 cloves garlic finely chopped
  • 5- ounce package sliced pepperoni cut into strips
  • 1 1/2 teaspoons dried basil
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8- ounce package refrigerated 3-cheese tortellini pasta cooked
  • Garnish:
  • Shaved Parmesan cheese
  • Fresh basil

Instructions

  • Heat olive oil in a skillet over medium heat.
  • Sauté thinly sliced onion, red pepper, and finely chopped garlic until they are crisp-tender.
  • Add the sliced pepperoni, dried basil, dried oregano, Italian seasoning, garlic powder, salt, and pepper.
  • Cook, stirring occasionally, for about 5 minutes.
  • Stir in the cooked tortellini pasta and continue cooking until the mixture is heated through.
  • Garnish with shaved Parmesan cheese and fresh basil.
