Pork Tenderloin with Red Sesame Seed Sauce

Ingredients
Makes 4 servings
- Red Sesame Seed Sauce
- 3 pork tenderloins about ¾ pound each, silver skin removed
- ½ teaspoon salt or to taste
- ¼ teaspoon freshly ground pepper or to taste
- 1 teaspoon dried oregano Mexican variety preferred, crumbled
- 1 tablespoon olive oil or vegetable oil
- 1 tablespoon toasted sesame seeds optional
- Cilantro sprigs
Instructions
- Prepare the red sesame seed sauce.
- Reserve in the pan off heat.
- Preheat oven to 450°.
- Rub the pork with salt, pepper, and oregano.
- Heat the oil in a large nonstick skillet over medium-high heat.
- Brown the pork on both sides, about 5 minutes total.
- Transfer to a baking pan and roast until no longer pink inside, 18 to 20 minutes (155° to 160° on a meat thermometer).
- Remove from the oven and let stand 6 to 8 minutes.
- Reheat the sauce.
- Slice the pork and serve with a portion of the sauce spooned over the meat.
- Sprinkle with sesame seeds, if using, and garnish with cilantro.
