Pork Tenderloin with Red Sesame Seed Sauce

Pork tenderloin is perfectly complemented with Red Sesame Seed Sauce. A good starter is Cabbage and Cheese Salad with Tortillas.

Ingredients
Makes 4 servings

Red Sesame Seed Sauce
▢

pork tenderloins
about ¾ pound each, silver skin removed

teaspoon
salt
or to taste
▢
¼
teaspoon
freshly ground pepper
or to taste
▢

teaspoon
dried oregano
Mexican variety preferred, crumbled
▢
1
tablespoon
olive oil or vegetable oil
▢
1
tablespoon
toasted sesame seeds
optional

Cilantro sprigs
Instructions
Prepare the red sesame seed sauce.
Reserve in the pan off heat.
Preheat oven to 450°.
Rub the pork with salt, pepper, and oregano.
Heat the oil in a large nonstick skillet over medium-high heat.
Brown the pork on both sides, about 5 minutes total.
Transfer to a baking pan and roast until no longer pink inside, 18 to 20 minutes (155° to 160° on a meat thermometer).
Remove from the oven and let stand 6 to 8 minutes.
Reheat the sauce.
Slice the pork and serve with a portion of the sauce spooned over the meat.
Sprinkle with sesame seeds, if using, and garnish with cilantro.
