  • Preheat the oven to 200°C (400°F), Gas Mark 6.
  • Place the pepper halves cut-side up in a roasting tin and roast for 20 minutes, until beginning to soften.
  • Meanwhile, heat a nonstick frying pan, add the minced lamb and cook until it begins to brown.
  • Add the garlic, cumin and paprika and cook for 1 minute.
  • Stir in the quinoa and vegetable stock, cover and simmer for 10 to 12 minutes, until the quinoa is tender.
  • Stir the mint and parsley into the lamb and quinoa mixture.
  • Remove the peppers from the oven and divide the filling evenly among the pepper halves.
  • Return to the oven and bake for a further 15 minutes.
  • Serve hot with steamed green beans and courgettes.
