Ingredients

  • 1 pound 455 g lima beans, fresh, frozen, or canned
  • 1 red onion sliced into julienne
  • 2 tablespoons 30 g minced garlic
  • 2 tablespoons 30 ml extra-virgin olive oil
  • 2 tablespoons 30 ml balsamic vinegar
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 350°F (180°C, or gas mark 4).
  • Line a baking sheet with aluminum foil.
  • In a bowl, toss together all the ingredients to coat.
  • Spread the mixture evenly on the baking sheet.
  • Bake for 20 to 25 minutes, or until the lima beans are tender and the onions are translucent and beginning to brown.

A light red wine, such as Pinot Noir, will complement the sweetness of the roasted lima beans.
