Notes & Wine Advice
Serving Suggestions
Spoon the pâté onto your chosen canapé bases and finish with a little chopped parsley. It can also be served as a Dips option with crackers, toasted bread or vegetable sticks, or as part of a larger Appetizer selection.Recipe Notes
Drain the smoked fish thoroughly before blending so the pâté does not become too loose. The cream cheese and crème fraîche soften the smoky flavour, while horseradish, lemon and paprika give the mixture a sharper finish.Fish Options
The original recipe allows smoked kippers, sardines or smoked trout. Each produces a slightly different flavour, so use whichever is available or preferred. Taste before adding additional seasoning because smoked fish can already be quite salty.Storage Advice
Keep the seafood pâté refrigerated in an airtight container and use within 1 day for the best quality. Add it to canapé bases shortly before serving so they remain crisp.Wine Advice
A crisp Sauvignon Blanc works particularly well with the smoked fish, lemon and horseradish. A fresh Pinot Grigio is another suitable choice, especially with the creamy texture of the pâté.Nutrition values

About Smoked Seafood Pâté
Smoked Seafood Pâté is a quick, creamy preparation combining smoked Fish with cream cheese, crème fraîche, horseradish, lemon and paprika. Fresh parsley provides a simple herbal finish. Because everything is blended together, the pâté takes only a few minutes to prepare and works particularly well for canapés and appetiser platters.
Choosing the Smoked Fish
The recipe gives several choices for the main ingredient: smoked kippers in brine, sardines or smoked trout. Each option changes the character of the pâté slightly. Kippers provide a pronounced smoky flavour, sardines are rich and savoury, while smoked trout gives the mixture a somewhat more delicate character.
Whichever fish you choose, drain it thoroughly before blending. Excess liquid can make the finished pâté thinner than intended.
Creating the Creamy Texture
Cream cheese and crème fraîche form the creamy base of the pâté. Together they soften the stronger flavour of the smoked seafood without masking it completely.
Blend the mixture until smooth for an elegant canapé topping. If you prefer more texture, stop blending while a few small pieces of fish are still visible.
Lemon, Horseradish and Paprika
Horseradish cream adds gentle heat that works particularly well with smoked Seafood. Lemon zest and juice provide freshness and acidity, helping to balance the richness of both the fish and dairy ingredients.
Paprika adds another savoury layer without overpowering the fish. Freshly ground black pepper can be added to taste, but additional salt may not be necessary because smoked fish is naturally salty.
Finishing with Fresh Parsley
Finely chopped parsley is stirred through after blending rather than processed completely into the pâté. This preserves some of its fresh flavour and gives the creamy mixture small flecks of colour.
Reserve a little extra parsley for scattering over the finished canapés just before serving.
Serving as Canapés
The pâté can be spooned directly onto prepared canapé bases. Crisp toast, crackers or small vegetable bases all work well. Keep the portions relatively small because smoked fish and cream cheese provide plenty of flavour.
For a Party or Birthday, prepare the pâté beforehand and assemble the individual canapés shortly before guests arrive.
Serving as a Dip or Spread
The same mixture can be served in a small bowl rather than on individual bases. Surround it with crackers, toasted bread or crisp vegetables and allow guests to help themselves.
This makes the recipe flexible enough to serve as an appetiser, snack, canapé topping or part of a larger buffet.
Preparing Ahead
Smoked Seafood Pâté requires no cooking, making it particularly useful when several different appetisers need to be prepared. The complete mixture can be blended ahead and kept chilled until required.
Cover it carefully to prevent the pâté from drying out or transferring its smoked aroma to other foods in the refrigerator.
Food Safety
Keep the smoked seafood and finished pâté refrigerated and avoid leaving the dairy-based mixture at room temperature for extended periods. Use clean utensils when preparing and serving the pâté.
For current information about selecting, storing and preparing seafood safely, consult the U.S. Food and Drug Administration food-safety information.
Smoked Seafood Pâté turns a handful of strongly flavoured ingredients into an easy, versatile canapé topping. Smoky fish, creamy cheese, fresh lemon and horseradish create a balanced spread that is particularly convenient for parties and other occasions where small appetisers are served.
