Notes & Wine Advice
Serving Suggestions
Spoon the pâté onto your chosen canapé bases and finish with a little chopped parsley. It can also be served as a Dips option with crackers, toasted bread or vegetable sticks, or as part of a larger Appetizer selection.
Recipe Notes
Drain the smoked fish thoroughly before blending so the pâté does not become too loose. The cream cheese and crème fraîche soften the smoky flavour, while horseradish, lemon and paprika give the mixture a sharper finish.
Fish Options
The original recipe allows smoked kippers, sardines or smoked trout. Each produces a slightly different flavour, so use whichever is available or preferred. Taste before adding additional seasoning because smoked fish can already be quite salty.
Storage Advice
Keep the seafood pâté refrigerated in an airtight container and use within 1 day for the best quality. Add it to canapé bases shortly before serving so they remain crisp.
Wine Advice
A crisp Sauvignon Blanc works particularly well with the smoked fish, lemon and horseradish. A fresh Pinot Grigio is another suitable choice, especially with the creamy texture of the pâté.
