Summer Peach Muffins
Ingredients
- 1 cup peeled and chopped fresh peaches
- 1 tsp. lemon juice
- ⅔ cup sugar
- ½ tsp. salt
- ¼ tsp. cinnamon
- 3 tsp. baking powder
- 1 cup milk
- 1 egg
- ¼ cup ½ stick butter, melted
- 2 cups all-purpose flour
Instructions
- In a small bowl, sprinkle the peaches with the lemon juice and mix to cover the pieces; set aside.
- In a large bowl, mix together the sugar, salt, cinnamon, and baking powder.
- Add the milk, egg, and butter and mix well.
- Add the flour and mix again, being careful to not overmix.
- Fold in the fruit and then fill greased muffin cups ⅔ full.
- Bake for 20 minutes or until done.
- Remove the muffins from the pan and cool on a wire rack.
