Instructions
Grease and line a loaf pan with parchment paper.
Beat butter, sugar, and vanilla until light and fluffy.
Add eggs one at a time and mix well.
Stir in mashed bananas and maple syrup.
Add flour, baking powder, baking soda, cinnamon, and salt.
Mix until combined, then fold in walnuts.
Transfer batter to the loaf pan and smooth the top.
Preheat air fryer to 325°F.
Place the pan in the basket and cook for 10 minutes.
Add banana halves on top and cover with foil.
Cook for 40 minutes.
Remove foil and cook for 5 more minutes until done.
Cool in the pan for 10 minutes, then transfer to a rack.
Sprinkle with brown sugar and serve with ricotta and honey.

Notes
Use very ripe bananas for the best flavor and moisture. Do not overmix the batter to keep the bread soft. Covering with foil prevents over-browning.
