Ingredients
For the couscous:

cooked pearl couscous

olive oil

For the salad:

red wine vinegar

For the lemon:

Instructions
Chop two slices of lemon and mix with couscous and olive oil.
Season with salt and pepper.
Place in air fryer and cook at 350°F (175°C) for 20 minutes, stirring every 5 minutes.
Return couscous to bowl.
Add vinegar, tomatoes, shallot, and cucumber.
Grate lemon zest over the mixture.
Season and toss well.
Top with feta and dill and serve.

Notes
Use cooled couscous for the best crispy texture. Stir regularly during cooking for even browning. Serve slightly warm or at room temperature.

Add olives for extra Mediterranean flavor. Use goat cheese instead of feta. Add nuts for additional crunch.
