For the cauliflower:

For the mole sauce:

Instructions
Toss cauliflower with oil, salt, and pepper.
Cook in air fryer at 375°F (190°C) for 10 minutes, stirring halfway.
Blend all sauce ingredients until smooth.
Simmer sauce for 3 to 5 minutes until reduced.
Pour sauce over cauliflower and mix.
Cook for 5 more minutes until coated and slightly charred.
Serve warm.
