Slice the chicken breasts in half lengthways to create four fillets.
Place the chicken fillets between sheets of baking paper and gently pound them with a kitchen mallet or rolling pin until they are an even thickness. Season with sea salt and black pepper.
Place the plain flour in a shallow bowl and the lightly beaten egg in another shallow bowl. Combine the panko breadcrumbs and Parmesan cheese in a third bowl.
Coat each chicken fillet in the flour, dip it into the beaten egg, then coat evenly with the breadcrumb mixture.
Arrange the chicken in a single layer in the air fryer basket and air-fry at 180°C for 15 minutes, or until golden.
Spoon 1–2 tablespoons of tomato passata over each chicken fillet and top with a slice of mozzarella cheese.
Return the chicken to the air fryer and cook for a further 5–10 minutes, until the cheese is golden and the chicken is cooked through.
Serve with the cooked spaghetti, extra tomato passata and fresh basil leaves.
