Lightly grease an air fryer baking pan that fits inside the basket.
Combine the oat bran, wheat bran, cream cheese, egg yolks, salt, and black pepper in a mixing bowl.
Stir until the pancake base is smooth and evenly combined.
Fold the diced ham and fat-free quark into the pancake mixture.
Whisk the egg whites in a clean mixing bowl until firm peaks form.
Gently fold the whipped egg whites into the ham mixture in three additions.
Divide the mixture into four equal portions.
Pour one portion into the prepared baking pan and smooth the surface.
Air fry at 180°C (356°F) for approximately 35–40 minutes until firm and golden.
Carefully turn the pancake with a silicone spatula.
Air fry for another 5 minutes until both sides are browned.
Check that the center reaches at least 74°C (165°F).
Repeat with the remaining portions or cook multiple pancakes together when space allows.
Allow the pancakes to rest for 5 minutes before serving.
