Toss the baby potatoes with the olive oil and season with sea salt flakes and freshly ground black pepper.
Air fry for 20 to 30 minutes, shaking every 10 minutes, until lightly golden.
Gently crush the potatoes to create flat edges.
Return the potatoes to the air fryer and cook for a further 10 minutes, until crisp.
Store in an airtight container for up to 1 day.
Add your desired toppings before serving.

Recipe Notes
Choose baby potatoes of a similar size so they cook evenly. The potatoes should be completely tender before crushing them. Press gently with a fork so they flatten without falling apart.The second cooking stage in the Airfryer is what creates the crisp edges, so leave a little space between the potatoes where possible.
