Cut each potato into evenly sized wedges.
Place the potato wedges in a mixing bowl.
Add the olive oil.
Toss until every wedge is lightly coated.
Add the Australian herb blend, salt, and black pepper.
Toss again until the seasoning is evenly distributed.
Arrange the wedges in the air fryer basket in a single layer.
Leave space between the wedges for air circulation.
Cook in batches if necessary.
Air fry for 15–20 minutes.
Shake the basket halfway through cooking.
Remove the wedges when golden and crisp outside and tender inside.
Transfer them to a serving plate.
Serve immediately.
