Bacon and Egg Guacamole

This recipe is a blend of our egg guacamole and bacon guacamole shared earlier. Wouldn’t you call this a splurge?

Ingredients

Serves: 4

  • 3 ripe avocados pitted and peeled
  • 1 small red onion finely diced
  • ¼ tsp ground cumin
  • 1 jalapeno pepper or to taste cored and finely chopped 1 tbsp fresh lime juice
  • ⅓ cup chopped fresh cilantro
  • 1 tsp chili powder or to taste
  • Salt to taste
  • 3 bacon slices cooked and crumbled, divided 2 hard boiled eggs, peeled and finely chopped

Instructions

  • Mash avocados in a bowl using a potato masher or fork to your desired consistency.
  • Add remaining ingredients and fold in well.
  • Serve guacamole.
