Baked Garlic Ricotta
This has all of the richness and creaminess of a soufflé but is much more forgiving. Serve with vegetables, alongside your favourite protein or even as an accompaniment to a charcuterie tray.

Ingredients

peeled Simple Roasted Garlic

ricotta cheese

grated Parmesan cheese

large egg
beaten

olive oil

tablespoon
fresh lemon juice

¼
teaspoon
salt
▢

teaspoon
freshly ground black pepper

teaspoon
finely chopped fresh rosemary
Instructions
Preheat air fryer to 180°C for 3 minutes.
Squeeze garlic into a medium bowl.
Using the back of a fork, mash until a garlic paste is formed.
Add remaining ingredients and combine.
Spoon mixture into an ungreased 15cm oven-safe baking dish.
Place dish in air fryer basket.
Cook for 7 minutes.
Serve warm.
