Instructions
Crush the coriander seeds, cumin seeds, chilies, garlic, turmeric, salt, and pepper into a paste using a pestle and mortar.
Add enough olive oil to loosen the marinade.
Rub the marinade all over the lamb cutlets.
Cover and refrigerate overnight if possible.
Toast the almonds, pistachios, sesame seeds, cumin, and a pinch of salt in a dry pan until golden.
Crush lightly into crunchy pieces.
Grate the cucumber and squeeze out excess liquid.
Combine with chopped mint, yogurt, lemon juice, salt, and pepper.
Grate the tomatoes into a bowl and discard the skins.
Add chopped chili, lemon juice, coriander, salt, and pepper.
Crumble feta over the tomato mixture.
Heat a grill pan or barbecue over high heat.
Cook the lamb cutlets for about 4 minutes per side until sizzling and golden.
Serve with the dips and toasted nuts.
