Instructions
Cook the chopped bacon in a medium saucepan over medium heat until crispy.
Remove the bacon pieces and set aside, leaving the bacon drippings in the pan.
Reduce the heat to low and add red wine vinegar, water, honey, and Dijon mustard.
Whisk until combined.
If a thicker consistency is desired, dissolve cornstarch in a small amount of water and whisk it into the dressing.
Simmer for 2-3 minutes until slightly thickened.
Stir in the cooked bacon bits and season with salt and black pepper to taste.
Serve warm over salads or as a flavorful topping for meats.
