Smooth homemade hummus with chickpeas, tahini, garlic, cumin and a generous splash of fresh lemon juice. Serve this creamy Mediterranean dip with vegetables, pita bread or sandwiches.
1can chickpeas15 ounces or 425 g, drained and rinsed
3tablespoons tahini
1/4cup fresh lemon juice
1/4cup extra-virgin olive oil
1/4cup cold waterplus more if needed
2cloves garlicroughly chopped
1/2teaspoon ground cumin
1/2teaspoon fine salt
Instructions
Place the drained chickpeas in a food processor.
Add the tahini, lemon juice, garlic, cumin and salt.
Process for 1 minute.
Stop the food processor.
Scrape down the sides with a rubber spatula.
Start processing again.
Gradually pour in the cold water.
Slowly add the olive oil.
Continue processing for 2 to 3 minutes until smooth and creamy.
Add another tablespoon of water if the hummus is too thick.
Taste and adjust the lemon juice, cumin or salt if necessary.
Transfer the hummus to a serving bowl.
Drizzle with a little extra olive oil if desired.
Serve immediately or refrigerate until needed.

Processing the hummus for several minutes produces a smoother texture. Cold water helps loosen the tahini and chickpeas without adding more oil. For an exceptionally smooth result, remove the loose skins from the chickpeas before blending.
