Instructions
Combine the garlic, chili flakes, soy sauce, honey, and ketchup in a food processor.
Add the pork belly to a zip-top bag with the marinade.
Marinate in the refrigerator for at least 2 hours or overnight.
Remove the pork belly from the marinade and pat dry.
Slice the pork belly into thin slices.
Preheat the grill to medium-high heat.
Combine the ground beef with Dijon mustard and barbecue rub.
Form into 4 equal burger patties.
Season with salt and black pepper.
Brush the burger buns with melted butter.
Grill the burgers for 7 to 8 minutes while turning once.
Move the burgers to indirect heat and top with cheddar cheese.
Toast the buns briefly on the grill.
Grill the pork belly slices until crispy on both sides.
Brush the buns with barbecue sauce.
Assemble the burgers with lettuce, tomato, cheddar cheeseburgers, and crispy pork belly.
Serve immediately.
