Buttered Scallion Soup with Cheddar Panini

Instructions
In a saucepan, melt the butter.
Add the scallion whites and cook them until they become soft.
Add the broth, peas, and 3 cups of water.
Boil the mixture at simmering heat, allowing them to cook until they become tender.
Remove from the heat, then set them aside.
In a separate bowl, mix the scallion greens and cheddar.
Brush a slice of bread with the oil, then place the cheddar mix between them.
Top the cheddar mix with the other slice of bread.
Preheat your grill, then cook the sandwich in it.
Cook until the sandwich becomes golden in color and crisp.
In a blender, process the pea mixture until it becomes smooth.
Add lemon juice and seasonings.
Slice the sandwich into finger strips.
Serve it with the soup.
