Instructions
Heat the olive oil in a large saucepan over medium heat.
Add the sliced onions and cook, stirring occasionally, for about 10 minutes until they begin to soften.
Stir in the brown sugar, balsamic vinegar, and apple cider vinegar.
Add the fresh thyme, ground ginger, cinnamon, cloves, salt, and black pepper.
Pour in the water and stir to combine.
Reduce the heat to low and let the mixture simmer, uncovered, for about 20 minutes, stirring occasionally.
The chutney is ready once the onions are tender and the mixture has thickened to a jam-like consistency.
Remove from heat and let it cool before serving or storing.
