raw fish with firm flesh
e.g., sea bass, snapper, diced

juicy fresh tomatoes

fresh green chili peppers to taste
can be replaced with fresh green bell pepper, finely chopped

Several cloves of garlic
finely chopped

fresh limes
juiced

A handful of fresh cilantro
coarsely chopped

teaspoon
olive oil

Salt to taste

Black pepper to taste
Instructions
Place the diced raw fish in a bowl.
Add the finely chopped onions, tomatoes, green chili peppers (or bell pepper), and garlic to the fish.
Squeeze the limes and pour the juice over the fish mixture.
Ensure that the fish is completely covered with the lime juice.
Let it marinate in the refrigerator for about 30 minutes to 1 hour.
Add the chopped cilantro to the ceviche and mix gently.
Add olive oil, salt, and black pepper to taste.
Stir again gently to combine all the flavors.
Notes & Wine Advice
Serve the ceviche chilled, optionally on a bed of lettuce or with tortilla chips on the side.
