Beat the softened butter and sugars until pale and creamy.
Beat in the vanilla extract and egg.
Fold through the flour, bicarbonate of soda and salt until a soft dough forms.
Stir through the dark chocolate chips.
Line the air fryer basket with baking paper trimmed to fit.
Divide the mixture into 8 equal portions and place them well apart in the basket.
Air fry for 12 to 15 minutes, until golden.
Check the bases are crisp and cooked through.
Leave the cookies to cool completely.
Store the cooled cookies in an airtight container for up to 3 days.
Place a scoop of vanilla ice cream between two cookies and gently press together.
Repeat to make 4 ice cream cookie sandwiches.
