puff pastry dough
homemade or store-bought

2 links chorizo, cut into ¼-inch slices

egg yolk
lightly beaten (for brushing)
Instructions
Place an oven rack in the upper position.
Preheat the oven to 450°F.
Roll out the puff pastry dough to a thickness of ⅛ inch.
Cut the rolled-out dough into 16 rounds, each approximately 1½ inches in diameter.
Place one slice of chorizo in the center of each pastry round.
Brush the edges of the pastry round with the lightly beaten egg yolk.
Cover each chorizo slice with a second pastry round, pressing the edges together with a fork to seal.
Place the assembled chorizo puffs on a cookie sheet.
Bake in the preheated oven until the puffs are lightly browned.
Serve the Chorizo Puffs hot.
