Classic zucchini bake combines grated zucchini, Cheddar cheese, eggs, oregano, and baking mix in a comforting oven-baked casserole. This easy vegetarian dish has a golden top and a tender, lightly biscuit-like texture.
Lightly grease an 8-inch square baking dish with cooking spray.
Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
Combine the drained zucchini, Bisquick, Cheddar cheese, and beaten eggs in a mixing bowl.
Add the oregano, salt, and black pepper.
Stir until all the ingredients are evenly combined.
Spread the zucchini mixture evenly in the prepared baking dish.
Bake for 40–45 minutes until the top is golden and the center feels firm.
Allow the zucchini bake to rest for 5 minutes.
Cut into 4 equal portions and serve warm.

Serving Suggestions
Serve this zucchini bake with a fresh garden salad, roasted tomatoes, green beans, or crusty bread. It also works as a vegetable side dish alongside recipes from our Chicken Recipes or as a light meal with something from our Salad Recipes.
Recipe Notes
Squeeze as much liquid as possible from the grated zucchini. Removing this moisture prevents the casserole from becoming watery and helps it develop a firm, sliceable texture. Let the finished bake rest before cutting. Browse our Casserole Recipes for more comforting oven dishes.
Variations
Replace Cheddar with mozzarella, Monterey Jack, or a mixture of cheeses. Add chopped spring onions, bell pepper, fresh basil, or chili flakes for extra flavor. A gluten-free baking mix can replace Bisquick when required. Find more ideas in our Vegetarian Recipes and Cheese Recipes.
Wine Advice
A crisp Sauvignon Blanc provides enough acidity to balance the Cheddar cheese. A light Pinot Grigio is another refreshing choice that complements the mild zucchini.
