Tomato and Green Pepper Pies

Ingredients
Makes 5 Small Pies

for Empanada Dough
Basic Long Loaf dough, or pizza dough
▢

tablespoons
vegetable oil
▢
1/2
pound
firm ripe tomatoes
cut into very thin slices
▢
2
medium
green bell peppers
cut into very thin slices
▢

small
onion
thinly sliced
▢
2
garlic cloves
finely chopped
▢
Salt
to taste

Freshly ground black pepper
to taste

olive oil
Instructions
Prepare the bread dough or pizza dough as instructed in steps 1 and 2 of the recipe.
Punch down the dough and knead in 1 tablespoon of vegetable oil, adding flour if necessary.
Divide the dough into 5 equal pieces and shape them into balls.
Roll each piece out into a 6-inch round, about 1/8-inch thick, and curl up the edges to create a rim.
Place the dough rounds on a baking sheet.
Preheat the oven to 350°F (175°C).
Arrange the tomato slices in overlapping circles over each dough round.
Place 3 bell pepper rings over the tomatoes on each pie.
Scatter the sliced onion and chopped garlic over the pies.
Season with salt and freshly ground black pepper.
Finally, drizzle each pie with 1 teaspoon of olive oil.
Bake the pies for about 20 minutes or until the vegetables are tender, and the crust is lightly golden.
