Corn Waffles With Cilantro-Lime Butter

These golden waffles are also great served with syrup or honey. Because there are various shapes and sizes of waffle irons, yields may vary.
Ingredients
Makes 10 (4-inch) waffles

buttermilk
▢

vegetable oil

frozen whole kernel corn
thawed

Cilantro-Lime Butter
Instructions
Stir together first 3 ingredients in a large bowl; make a well in center of mixture.
Stir together egg yolks, buttermilk, vegetable oil, and corn; add to dry ingredients, stirring just until dry ingredients are moistened.
Beat egg whites at high speed with an electric mixer until stiff peaks form; fold into batter.
Cook, according to manufacturer’s instructions, in a preheated, oiled waffle iron until golden.
