Ingredients

Instructions
Preheat the oven to 300°F.
Use a sharp knife to scrape excess fat from the pork skin.
Cut the pork skin into 1-inch pieces using kitchen shears.
Place the skin pieces onto a wire rack set over a large sheet pan.
Sprinkle evenly with kosher salt.
Roast in the oven for about 3 1/2 hours until golden brown and crispy.
Remove the cracklins from the oven.
Transfer to paper towels to drain excess fat.
Serve warm or cooled with barbecue rub or barbecue sauce if desired.
